An entirely experimental coffee from Jairo Arcila, owner of the Santa Monica coffee farm. This Castillo micro-lot was fermented anaerobically for 72 hours with all its natural sugars left on the beans, alongside wine yeast and macerated blackberries.

The result is a coffee with a strikingly unusual flavour profile, notes of blackberry, hoppy IPA, and coconut - wilder and more adventurous than most other co-ferments.
