Birch sugar or xylitol is a completely natural table-top sweetener. The sweetness of birch sugar is almost the same as that of regular sugar. In addition to its sweetness, it tastes cool and fresh.
Birch sugar is a great substitute for regular sugar and due to its structure it can be used like “regular” sugar for all sweetening. Xylitol is heat-resistant, so it is also ideal for baking.
The xylitol in birch sugar promotes dental health. Due to its chemical structure, caries-causing bacteria are unable to use it as food. Birch sugar has a low glycemic index (GI 7), so it raises blood sugar very slowly.
